For too long, it was a lot of bad coffee. They tried the big chains, they tried a few local spots in Boston and on Cape Cod, and they even tried a well regarded local shop out in Seattle. Nobody seemed to be able to get it just right. As the saying goes: if you want it done right, you had better do it yourself.</p> <img src="secure/oscomm/images/aboutUsMap.jpg"> <p>So now we run a small roastery in Chatham, Massachusetts. We use a Probat drum roaster and produce 15 to 20 pound batches of the best coffee we've ever had. Small batches means that it's easier to prevent mistakes, and there isn't a warehouse full of coffee sitting around getting stale. In order to fully dedicate ourselves to our students during the school week, we maintain a weekend roasting schedule from September to June. Since we strive for the freshest coffee, delivered in an accurate and timely fashion, we will begin shipping all orders on Mondays. To help us ensure we can pack and ship your order with the freshest coffee, we are asking that all orders be placed by 5pm on Fridays. We do offer an automatic recurring shipment option, <a href="regulars.html">The Art of Roasting Regulars</a>, that is shipped the first Tuesday of each month with a selection of 2 or 3 pounds of coffee of your choice. The price includes shipping and is $26 for 2 pounds and $39 for 3. There is no contract to sign, and the automatic shipments can be stopped at any time.<br /><br /> During the summer months when Chatham is in full summer mode, we too are on summer break and roast with much greater frequency. The recipe comes from this article in the <a href="http://www.nytimes.com/2007/05/06/style/tmagazine/06ticed.html?_r=1&n=Top%2FReference%2FTimes%20Topics%2FSubjects%2FR%2FRecipes&oref=slogin">New York Times</a> where you create a concentrate using 1 lb fresh ground coffee to 10 cups of fresh cold water. You let it steep for 12 hours, and then strain it. Once you have your concentrate you can add cold water for iced coffee, or milk for a delicious latte. The ratio is 1 part concentrate to 2 parts other liquid. But feel free to experiment. The Guatemala Antigua is our favorite to date.<br /><br /> A smaller quantity can be made in your french press. Just double the usual coffee weight, and fill with cold water. Let it sit for 12 hours, stir, plunge and enjoy in a 1 to 1 ratio with milk or cold water.
